Rhubarb Pineapple Balsamic Shrub

Rhubarb is one of my favorite veggies. I love the color, the flavor, and how delicious it is in a pie, crisp, and canned into jam or syrup. It is pretty easy to get 1 3/4 cup chopped rhubarb; even a new gardener can cultivate this amount. It is also available in grocery stores. Just be sure to be careful with the leaves as they are poisonous.

Shrubs are a syrup made with fruit (which spoils rather quickly without refrigeration), sugar or honey, and vinegar. Vinegar is very high in acid, and acid is one way we can make food and drink a place where germs that make us sick cannot thrive. Sugar is a powerful preservative, which is one of the reasons a gummy worm doesn’t rot away when lost under a car seat the way a slice of bread will. The combination of sugar and vinegar means that fresh fruit flavor is preserved in a concoction that will last much longer than fruit left whole.

Strawberry Pineapple Shrub Recipe

Strawberry Pineapple shrub is an easy preserve that is a perfect cocktail mixer and it elevates sparkling water infinitely. The vinegar and sugar combined with the fruit make a bright and flavorful syrup with very little effort and this is the perfect shrub for beginners because it is simple to make. I enjoy mine with sparkling water (the lemon flavored kind is a tasty addition) and with a shot of tequila. It’s not as foreign a flavor as my delicious Rhubarb Pineapple Balsamic Shrub so I’d say it’s the better of the two to start with if you are shrub-uninitiated. This particular shrub also is the prettiest pink color. Read on, Dear Readers!

Blood Orange Balsamic Shrub

Blood Orange Balsamic Shrub is the second shrub I have crafted with balsamic vinegar. The other recipes I have shared use apple cider vinegar and that is a much more mild tasting vinegar. Balsamic is bold both in flavor and in color and when added with blood oranges and plain white sugar it creates a strong but delicious shrub. This mixes so, so well with unflavored sparkling water and in a cocktail with bourbon.

A shrub is one of the simplest types of preserve. I have fallen in love with them and I want you to come along with me. There’s no hot water bath, no fermentation bubbles (though those would be exciting!) and the only real virtue required is patience. It takes about a week on the countertop for this beginner-friendly preserve but the results are so worth it. Shrubs are an excellent addition to water (and really, who is drinking enough? Not me…) and are sublime when added to a cocktail.

This 1-hour homemade coffee liqueur recipe can be prepared and dispensed into bottles for gifting or enjoying yourself in an hour. It is a simple recipe that my mother has used for years and this coffee liqueur is delicious both hot or cold in a variety of mixed drinks. It also is easily doubled and is best made with friends. Read on for a delicious homemade coffee liqueur recipe that won’t have you tied up in the kitchen all afternoon!

Rhubarb Pineapple Balsamic Shrub

This post will share one of my favorite shrub recipes. It uses bold tasting balsamic vinegar with pineapple and rhubarb. It’s great on its own with sparkling water but with tequila, it is over the moon delicious. Read on for the recipe!
Rhubarb Pineapple Balsamic Shrub

Rhubarb is one of my favorite veggies. I love the color, the flavor, and how delicious it is in a pie, crisp, and canned into jam or syrup. It is pretty easy to get 1 3/4 cup chopped rhubarb; even a new gardener can cultivate this amount. It is also available in grocery stores. Just be sure to be careful with the leaves as they are poisonous.

This shrub recipe is absolutely a good one for newbies to try. However, it is a bold shrub, that is strong tasting because of the balsamic vinegar. Remember as you make it, it will be diluted significantly with water and/or spirits. It won’t taste as strong as it smells. Don’t let that make you shy away. I have made a great many shrub recipes and this remains of the very best. One addition I made that was NOT my favorite was with one batch I added pickling spice, which included bay leaves. It wasn’t that good. Stick with the pepper, and the fruit mix, as that really results in a sweet-tart-savory mix that is delicious and oh-so-good with tequila. You don’t have to mix it with tequila of course but if that’s your libation of choice, you are in for a real treat.

Here’s how to make your own Pineapple Rhubarb Balsamic Shrub
  • 1 ¾ cup chopped rhubarb
  • ¼ cup chopped fresh pineapple
  • 1 ½ cup granulated sugar (though I wanted to try honey…stay tuned for an update on my next batch)
  • ¼ teaspoon black pepper (delicious- don’t skip, and maybe add more if you’re inclined or use 1 teaspoon of peppercorns)
  • 1 cup good quality balsamic vinegar
  • ½ cup good quality cider vinegar
  • up to 1/2 cup strawberries, chopped

Combine the rhubarb, pineapple, sugar, and pepper in the jar. I used my half gallon jar, but a quart would work. After an hour, give the sugar and fruit a stir and screw on the lid.

Let the mixture sit 24 hours. Add the vinegar, stir, and let the shrub sit for about a week on your countertop. Stir (or shake) daily. After 3-4 days, strain through a sieve into a clean jar. Use a cheesecloth if you care about a little sediment. I did not. Discard solids. Store in the refrigerator.

Rhubarb Pineapple Shrub Cocktail

Combine:

1 part rhubarb pineapple shrub

1 part tequila

2.5 – 3 parts sparkling water

Add the above to a glass full of ice and enjoy. This is over the moon delicious in a weird, spicy-sweet vinegar-y way. The pepper is good in the same way that a Bloody Mary is good in a peppery, savory way.

If you are a mason jar drinker like me, a half pint wide mouth jar accommodates:

¼ shrub

¼ cup tequila

½- ¾ cup of sparkling water and several large ice cubes.

That makes a strong and bold tasting drink. You might split it between two jars just to start out. Everything in moderation, Dear Readers 😉

What the heck is a shrub?

Shrubs were popularized during the Prohibition era when hostesses had no alcohol, little money, a little fruit and sugar, and wanted to create a refreshing drink for guests. Shrubs are essentially a sweet tart syrup made from fruit, sweetener and vinegar. They are NO COOK, and are concentrated so you’d only use a tablespoon or two in a glass with sparkling water.

Meyer Lemon Champagne Shrub Recipe

3 Meyer lemons, scrubbed clean

1 cup (or 1 gourmet bottle of 6 ounces) champagne vinegar*

1 cup sugar

*if this cannot be sourced, use the lightest tasting vinegar you can find; try a white wine vinegar or a rice wine vinegar but remember the champagne vinegar is really delicious.

Slice lemons and add to the bottom of a wide mouth quart jar or another clean glass jar. Add the sugar and wait 1 hour.

Add the champagne vinegar and stir with a wooden spoon till sugar is mostly dissolved.

Let shrub rest on the countertop for 3 days. Shake or stir daily.

Strain the shrub into a clean jar and store in the refrigerator.

The Best Copper Mugs

Moscow Mules are all the rage and for good reason. They are a refreshing, delicious cocktail served in a completely unique mug. These copper beauties are distinctive, insulative, and beautiful. When Jessica of Moscow Muled taught me about her company’s mugs, I realized how important the quality of the mug really is.

Moscow Muled Copper Mugs are lined with nickel, which I think is a very important distinction. Normally, drinks of all kinds have acid (read my blog post about acid here) which would corrode the copper and thus cause copper to leech into your drink. It also causes the mug to break down over time, making them not as long lasting. Moscow Muled Copper Mugs are lined in food-safe nickel, meaning no copper will leech into your drink and they’ll remain in beautiful shape for years to come. The nickel lining also looks really sharp, I think.

Meyer Lemon Champagne Shrub Recipe

Copper not only conducts electricity, but it’s also an excellent insulator. These copper mugs keep your drink- or dessert- really cold for longer.

To clean these copper mugs, you’d skip the dishwasher. Instead they are best cleaned with a slice of lemon and some sea salt. This will keep them looking their best and prevent pitting of the metal.

The copper mugs will develop a gorgeous patina, as copper does, and you’ll have the nickel lining still shining bright on the inside, protecting you from leeched copper.

Their copper mugs aren’t just for Moscow Mules. They are ideal for parfait-style desserts that depend on dairy remaining really cold to hold their shape.

Add 2 tablespoons Meyer Lemon Champagne Shrub to a chilled Moscow Muled Copper Mug. Top with sparkling water (I love this kind because they are a beautiful color, the glass is recyclable, and they stay cold when chilled) and cheers!
